We are a big pancake household. Every weekend I am whipping up a big old batch of pancakes. These Apple Cinnamon Oat Pancakes are one of our go to’s when we are looking to sneak more healthy ingredients into our little ones.

When using oat flour you can expect the pancakes to be a bit denser than traditional flour pancakes, but I actually like the texture as it reminds me of a nice bowl of oatmeal! Hope you enjoy this one with you family!

Apple Cinnamon Oat Pancakes

Ingredients
  

  • 4 cups oat flour
  • 2 tsp cinnamon
  • 3 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp sugar
  • 1 apple grated
  • 2 eggs
  • 2 cups milk

Instructions
 

  • Add all ingredients to a large bowl and mix until fully incorporated and smooth.
  • Heat a large non stick pan over medium high heat. Pour in 1/4 cup of the batter into the pan and let the pancakes cook gently for about 3 minutes per side. Don't be shy to add in more oil as needed.
  • Once all pancakes are cooked, serve with greek yogurt, sliced apples, and real maple syrup. Enjoy!

Andy’s Notes

A quick note when cooking with oat flour. Oat flour is very absorbent and you may find the batter drys out as it sits. If this does happen, simply add a couple table spoons of milk into the batter.
