Sweet potato cheddar Biscuits
It’s no secret I love biscuits. Like really love them. I feel like Biscuits are as comfortable as food can get for me. They just take me right back to my childhood when my mom would make tea biscuits all the time. So simple, and so perfect.
These sweet potato biscuits take the whole experience to the next level. The bacon, cheddar, and chive give the biscuits more flavour, and the sweet potato gives a lovely moistness to the biscuit without being dense. You are gonna want to try these for yourself.
Recipe

Cheddar, bacon, chive, sweet potato, Biscuits
Ingredients:
- 1 cup mashed and cooled sweet potato
- ½ cup cooked crumbled bacon
- ½ cup sliced chive or green onion
- 2 tbsp chopped jalapeno
- ½ cup shredded cheddar cheese
- 2 cups flour + more for dusting
- 2 tsp baking powder
- 1¼ tsp baking soda
- ½ tsp salt
- ⅓ cup + 3 tbs milk plus 2 tbs for brushing top of biscuits before baking
- ½ cup cold butter, grated using a box grater
Instructions:
- Preheat oven to 425F and line a baking sheet with parchment paper.
- In a large bowl add flour, baking powder, baking soda, salt, cheese, bacon, chives, and jalapeno, and cold shredded butter. Mix together.
- Next, create a well in the center of the mixture and add in the mashed sweet potato and milk. Stir together, but don't over mix.
- Tip out the dough onto a lightly floured surface and shape it into a rectangle. Using a rolling pin roll the dough out until it's about 1/2 inch thick. Starting with the end of the rectangle closest to you, fold end to the middle. Repeat with the end of the rectangle farthest away from you. You should now have a square. Turn the square a half turn and then roll back into a rectangle; repeat the folding process two more times. This is what creates nice flaky layers.
- Roll dough to about 2/3 of an inch thick.
- Using a cookie cutter or any circle and cut out biscuits and place on a baking sheet lined with parchment paper.
- Brush biscuits with milk and place in the oven for 21 minutes or until nice and brown.
- Let cool for 5 minutes before serving. Serve with butter and warm honey. Enjoy!!
