Curried Lentil Salad. This should be a summer staple!

This salad is one of my go-to summer meal prep hacks. Huge amount of flavour, fresh, zippy, sweet, spicy.. It has a bit of everything. Beyond being tasty, it’s super healthy and one heck of a salad to bring to a BBQ or potluck.. just saying.

The salad takes about 10 minutes to whip up and given you can serve it as a salad or a dip, it’s a perfect option for those last-minute summer bbq invites.

  • 2 cans lentils- well drained
  • 1/2 cup diced red onions
  • 1/3 cup diced red peppers
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 3/4 cup dried cranberries
  • zest from 1 lemon
  • juice from 1 lemon
  • 3 tbs red wine vinegar
  • 1 tbs honey
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp curry powder
  • 2 tsp salt
  • 1 tsp olive oil


  1. Combine all ingredients into a bowl. Mix and serve! Salad will stay in the fridge for up to 7 days.
