Curried Lentil Salad with herbs and dried cranberries

This Curried Lentil Salad is the most made recipe on my blog. That fact makes me so incredibly happy as it really is so delicious.  Huge amount of flavour, fresh, zippy, sweet, spicy.. It has a bit of everything. Beyond being tasty, it’s super healthy and one heck of a salad to bring to a potluck, or to make on a Sunday for a week of delicious lunches. Arguably my tastiest meal prep recipe. Even if you have never tried this, you want it.

The salad takes about 10 minutes to whip up. We eat it as a salad, a side, or even served with nacho chips as a dip. So versatile and delicious. Trust me when I say this will become one of your most craved recipes.

  • 2 cans lentils- well drained
  • 1/2 cup diced red onions
  • 1/3 cup diced red peppers
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 3/4 cup dried cranberries
  • zest from 1 lemon
  • juice from 1 lemon
  • 3 tbs red wine vinegar
  • 1 tbs honey
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp curry powder
  • 2 tsp salt
  • 1 tsp olive oil


  1. Combine all ingredients into a bowl. Mix and serve! Salad will stay in the fridge for up to 7 days.

Trust your taste buds here. Season to your taste. Add in the ingredients and adjust as need be. Also feel free to toss in additional vegetables or protein to make this more of a full meal! No wrong answers here!
