Using every bit of flavour! 

This is a super interesting recipe. Not only are we choosing ingredients that together deliver a powerhouse of flavours, but we’re also. Using up all of that great crispy ‘Fond’ found on the bottom of the pan.

When we cook in a frying pan, we often see a dark crust form on the bottom of the pan. This super flavourful layer is referred to as a Fond. We often deglaze the fond to release extra flavour into our dishes.

By cooking the pizza in the same pan we used to cook our toppings, we use up every little bit of flavour left in the pan, waste want not!

A proper oven safe pan is well worth the investment, here’s an example of a pan every home cook should have!

Making the dough for this Focaccia Style Pan Pizza 

The dough is a super important part of the recipe. We want a dough that is thick and airy, that soaks up all the fat of the Sausage, and that resembles more a Foccacia than a thin crust.

Think bread dough, not pizza dough.

The key to this rustic dough is to get it to a point where it no longer sticks to your fingers as you kneed it. If it is sticking, add 1 tbsp of flour at a time until it’s dry enough to work.

When it comes to toppings, go with what feels right.

I love this combination because it checks all of my boxes.

The Sausage is fatty and salty, and when paired with the bite of the red onion and the freshness of the cherry tomato, it just works. Add a bit of heat from the jalapeno and the creaminess of the ricotta, and you have a rock-star pizza!

 Focaccia Style Pan Pizza 

Focaccia Style Pan Pizza 

Ingredients:  

  • 2 Sausages Hot Italian
  • 1/2 Red onion Sliced
  • 1 large Garlic clove Sliced
  • 6 Cherry tomaotes Halved
  • 1 tsp Oregano
  • 1 tbs Chives
  • 1/4 cup Ricotta

For the dough

  • 3 1/2 cups Flour
  • 4 tsp Baking powder
  • 1 tsp Salt
  • 2 cups Water Room temp
  • 1 tbs Olive oil

Instructions: 

  • Start by preheating your oven to 475F.
  • Place a medium-large frying pan over medium high heat. Add in your crumbled sausage and cook for 2-3 min. Add in 1 sliced clove of garlic and 1/2 of a red onion sliced. Saute until the onion is translucent 5-6 min. Season with 1 tsp of salt.
  • Remove the onions and sausage from the pan. Do not discard or clean the pan, we will be cooking the pizza in it.
  • Into a bowl combine 3 1/4 cups of flour, 4 tbs of baking powder, 1 tsp of salt and 1 tbs of oil. Mix until a shaggy dough, turn out on a dusted surface and kneed until springy and no longer wet.
  • Press the dough into a circle, place into the bottom of the frying pan, making sure to stretch and cover the entire bottom of the pan.
  • Top your dough with the sausage and onions, adding your tomatoes, jalapeno, ricotta and chive. Turn your burner back to medium for 5min. After 5 min bake in the oven for 15-16 mins. For extra colour and flavour, increase heat to Broil for 2-3 min. (keep your eye on the pizza as it can easily burn!)
  • Once the crust is golden brown and the toppings are slightly charred, remove from the oven and let cook slightly. Finish with more chives and parm.
