I love this recipe. I made this Maple Pecan Pumpkin Oatmeal in partnership with Quaker Canada and I was so happy with the result. The perfect way to kick start a cold morning.   2. 14oz can of coconut milk
  3. Cinnamon, nutmeg, and maple syrup
  4. Pureed Pumpkin
  5. Toasted Pecans

Maple Pumpkin Oatmeal

  • 1 1/4 cup Quaker Quick Oats
  • 1 can Coconut Milk 14oz can
  • 2 tbs maple syrup
  • 1 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup Pureed Pumpkin
  • pinch salt
  • 1/4 cup chopped pecans


  • Place a medium sized pot over medium high heat. Pour in the coconut milk, pureed pumpkin, cinnamon, nutmeg, and salt. Bring mixture to a simmer.
  • Once simmer has been reached add in the Quaker Oats and mix. Cover and allow to simmer for 3 minutes. Remove from heat and spoon into 2 bowls. Top each bowl with maple syrup, pecans, and extra spoon of coconut milk if you have extra.
