This is a great salad to have up your sleeve. Wildly fresh, bright, colourful, and just a fun meal to eat. This is a light salad, but also packed a good amount of substance so that it can be eating like a meal and keep you full!

This salad is loaded with great ingredients. Let me show you what we are working with.

Freshness. Freshness was a top priority when developing this recipe. I tossed in mint, parsley, basil, raspberries, and cucumbers into the salad. The dressing is also a very bright, everyday style dressing that I think you will love. Made with limes, ginger, garlic, it has beautiful zippy flavours that makes this salad sing!

Now just because I focused on freshness doesn’t mean that this salad is a simple side dish and can’t stand on it’s own. In an effort to pump it up a bit I tossed in a can of chickpeas and a full sweet potato diced up. The addition of this extra protein, starch, and fibre, makes the salad more satisfying and keeps you fuller, longer.

Lime Ginger Maple Dressing

The dressing for this salad is absolutely a recipe you should pay attention too. Nothing fancy, and can easy operate as an every day dressing. I love dressings that are zippy and bring my salads to life. This dressing is made with lime juice, lime zest, fresh ginger, garlic, maple syrup, apple cider vinegar, salt, pepper, and olive oil. For better texture I suggest tossing all of the ingredients, minus the olive oil, into a blender and blend for 15 seconds on high. With the blender still going, slowly stream in the olive oil. Don’t rush this process. Following these steps will result in a fully emulsified dressing that is much more pleasant to eat. Don’t have a blender? No sweat. Then just pop all dressing ingredients into a bowl and mix with a spoon!

Spinach, Herb, Raspberry Salad with Maple Ginger Lime Dressing.

Servings 4 people

Ingredients:  

Ginger Lime Maple Dressing

  • 2 cloves garlic
  • 1/4 cup apple cider vinegar
  • 3 tbs maple syurp adjust amount based on your taste
  • 1 Lime, Juice + Zest
  • 1 inch fresh ginger
  • pinch salt
  • 1 tsp pepper
  • 1 1/4 cup olive oil

Salad

  • 2 cups spinach
  • 2 cups arugula
  • 1 cup broccoli florets, chopped
  • 1 cup fresh mint, torn
  • 1/2 cup parsely
  • 1 cup fresh basil
  • 1/2 cup green onion, sliced
  • 1 cup raspberries
  • 1 1/2 cups sweet potato, diced and mircowaved until soft
  • 1/2 cup cucumber, sliced
  • 1/4 cup red pepper
  • 1 can chickpeas, drained and rinsed.

Instructions: 

  • Let's get started with the dressing. Into a bowl of blender add in the garlic, apple cider vin, maple syrup, lime zest, lime juice, ginger, pepper, and salt. Turn blender on high and blend for 15 seconds. With the motor still running, slowly stream in the olive oil. Don't rush this process. After oil is done streaming you can place into a jar or squeeze bottle. This is good to keep in the fridge for up to 7 days.
  • Now into a large bowl add in all of the salad ingredients. Add about 1/2 cup of the dressing and toss. Enjoy!
