Friday Craving; Butter Chicken
How are we doing folks! September has rolled around and we are getting back to normal, and as such I thought it was the perfect time to do a live cook along!! Friday Night Cravings are back!

Below are the list of ingredients you will need. I have some ingredients that are a little trickier to source that I have listed as optional. If you can get them, Great.. if not, don’t stress!

Butter Chicken
Ingredients:
- CHICKEN (Feel free to substitute for tofu or Paneer)
- 1 cup full-fat yogurt
- 1 tbsp garam masala
- 1 tbsp kosher salt
- 1½ lbs boneless, skinless chicken thighs. Sliced into bite sized chunks
Butter Chicken Gravy
- 2 tbsp vegetable oil
- 1 yellow onion, diced
- 1 2-inch knob of ginger, finely diced
- 6 cloves sliced garlic
- Salt and pepper to taste
- 2 tsp paprika
- 2 tsp ground cumin
- 1 tbsp garam masala
- 1½ tsp turmeric powder
- 3 green cardamom pods (optional)
- 1 black cardamom pod (Optional)
- 1 cinnamon stick (optional)
- 1 tsp kashmiri chile powder (optional)
- ½ tsp fenugreek leaves (optional find at specialty grocery)
- 14 oz crushed tomatoes
- ⅔ cup water
- 1 cup (240ml) heavy cream
- 2 tbsp (28g) unsalted butter
Fresh Rita
- 1½ cup plain yogurt
- 1 tbsp cumin
- 1 tsp salt
- 1 cup shredded cucumber
- 1 cup basmati rice
