How to make a baguette?

This easy homemade baguette recipe needs only 4 ingredients. All you need to do is add flour, salt, instant yeast, and water into a bowl. Mix until you have a shaggy dough and then cover and let sit on the counter overnight. From here, pour the dough onto a floured surface, being careful not to push the air out of the dough, and then cut the dough into 4 rectangle shapes. Use your hands to form into shape, place onto a wire rack lined with parchment paper, and then bake in the oven set to 460F for 30-33 minutes.

What makes this recipe fun is how easy it is. There is no kneading required and all you need to to is pour all ingredients into a bowl before you head to bed, and then you can have fresh french homemade baguettes within 45 minutes of rolling out of bed. Doesn’t get fresher than that! No-knead bread recipes are super fun as they don’t require you to knead the dough to form the gluten networks. By allowing the dough time to rise, this creates the gluten networks at a slower pace and depending how long you let the dough rest for it can further develop the flavour of the dough!

Tips for nailing this homemade baguette recipe

  1. Make sure your instant yeast isn’t expired!
  2. When you pour the dough out of the bowl make sure not to push to much of the air out!
  3. Don’t be shy when flouring your work surface. It will make things easier
  4. Create slits along the top of the baguette before baking. This helps with even cooking.
  5. Allow the baguette to fully cool as this is an important part of the baking process.

Homemade Baguette

Prep Time 20 minutes
Cook Time 30 minutes
Servings 4 baguettes

Ingredients:  

  • 6 cups all purpose flour
  • 2 tsp salt
  • 3/4 tsp instant yeast
  • 3 cups water

Instructions: 

  • In a large bowl mix together flour, salt, instant yeast, water. Using a spoon or your hands mix together until you form a shaggy dough. Cover with a lid or plastic wrap and allow to rest over night or for at least 8 hours.
  • Pre heat oven to 460F and grab a cooling rack and line it with parchment paper. If you don't have a cooling rack you can use a baking sheet,
  • After resting the dough should have doubled in size. Carefully pour dough onto floured surface and also give the dough a light dusting of flour. Using a knife or bench scrapper cut the dough into 4 equal pieces. Using your hand gently form into a baguette shape being careful not to form air out of the loafs. Turn the loafs upside down and place onto the parchment lined cooling rack. If you have a sharp knife, slit the top of the loaf. Let the formed loaves rest on rack for 20 minutes while oven pre heats.
  • Place the rack into the oven and bake the baguettes for 30-35 minutes. Once baking is complete allow the baguettes to fully cool and enjoy!
