Chicken Caesar Smash Tacos

Ingredients:  

For the Tacos

  • 1 lb ground chicken
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup grated parmesan
  • 1 tsp Dijon mustard
  • 1 tbsp olive oil
  • Zest of ½ a lemon
  • 1 clove of garlic, minced
  • 6 small flour tortillas
  • 1 head romaine lettuce, chopped (you can also use a bag of pre-chopped romaine)

Caesar Salad Dressing

  • 3 cloves garlic
  • 1 egg
  • 1 tbsp Dijon mustard
  • 2 1/2 tbsp maple syrup
  • Juice of 1 lemon
  • 1 tbsp Worcestershire sauce
  • 1 1/4 cups shredded parmesan
  • 5 capers
  • 1/4 cup apple cider vinegar
  • 1 tbsp fresh cracked pepper
  • 1/2 tsp salt
  • 1 filet anchovy (optional)
  • 1 1/4 cups vegetable oil

Instructions: 

  • In a bowl, mix ground chicken with salt, pepper, parmesan, Dijon, olive oil, lemon zest, and garlic. Form into golf ball–sized portions.
  • Heat a large skillet over medium-high heat. Place a flour tortilla in the pan, add a tablespoon of the ground chicken mixture in the center, and smash flat using a spatula. The layer of chicken should be quite thin in order for it to cook properly.
  • Cook 3–4 minutes until golden and cooked through. Flip and cook 1–2 minutes on the other side. Repeat in batches.
  • To make Caesar dressing, add all ingredients except oil to a blender. Blitz to combine, then stream in oil slowly while blending until emulsified.
  • Top each taco with Caesar dressing, romaine lettuce, and crushed croutons. Garnish with more parmesan if desired. Serve immediately.
