Mongolian Ground Beef Bowl

Ingredients:  

Beef Mixture

  • 4 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 lb lean ground beef
  • salt and pepper

Vegetables

  • 1/2 red onion, sliced
  • 1/2 red pepper, sliced
  • 1 1/2 cups broccoli florets
  • 1 small zucchini, sliced
  • 1/2 serrano chili, sliced
  • Oil for sautéing

Sauce

  • 1/2 cup low sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons hoisin sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon rice vinegar

Instructions: 

  • In a large skillet over medium heat, add garlic, ginger, and ground beef. Brown the beef until fully cooked, breaking it up with a spoon. Season with salt and black pepper. Drain excess liquid and set beef aside.
  • In the same skillet, add a bit of oil and toss in red onion, red pepper, broccoli, zucchini, and serrano chili. Sauté for about 5 minutes until just tender.
  • In a small bowl, mix together soy sauce, honey, hoisin, brown sugar, and rice vinegar. Pour sauce into the pan with the vegetables.
  • Return the cooked beef to the pan. Stir everything together so the sauce coats all the ingredients evenly.
  • Serve hot over steamed jasmine or white rice. Garnish with sliced green onions and a pinch of red pepper flakes if you like heat.
