Place a medium sized pot over medium high heat. Pour in the coconut milk, pureed pumpkin, cinnamon, nutmeg, and salt. Bring mixture to a simmer.
Once simmer has been reached add in the Quaker Oats and mix. Cover and allow to simmer for 3 minutes. Remove from heat and spoon into 2 bowls. Top each bowl with maple syrup, pecans, and extra spoon of coconut milk if you have extra.
