Ingredients:

yellow onion, diced

sweet pepper, diced

green onions

basil

slices bacon, cooked and diced

shredded cheddar cheese (save some for the topping)

baking powder

Instructions:
Preheat oven to 375°F.
Sauté yellow onion and sweet pepper until softened. Toss in a bowl with green onions, basil, bacon, and cheese.
In a separate bowl, mix eggs, flour, baking powder, and salt. Combine with veggie mixture.
Let the batter sit for 5 minutes.
Scoop batter onto a lined baking sheet (about 2.5 tablespoons per biscuit). Sprinkle extra cheese on top.
Bake for 35–45 minutes. Increase temperature to 450°F for the final 5 minutes to achieve a golden-brown color.
Cool slightly before serving.
