2cupscooked rice (cooled rice preferred, but warm rice works in a pinch)
2tbspsriracha or hot sauce
1/2cuplow-fat sour cream
1/2cupcilantro, chopped
1/3cupshredded mozzarella cheese
Instructions:
In a casserole dish, mix chicken, bell peppers, red onion, garlic, lime juice, and all the seasonings.
Heat olive oil in a large pan over high heat and cook the chicken and vegetable mixture until the chicken is cooked through and the veggies are tender.
Stir in the cooked rice, hot sauce, sour cream, cilantro, and mozzarella cheese.
Serve immediately and enjoy!
