Chicken Fettuccine Alfredo Recipe

Ingredients:  

For the Chicken

  • 1 tbsp olive oil
  • 1 tsp butter
  • 2 chicken breasts
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp oregano

For the Sauce

  • 1 tsp butter
  • 1 tsp olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 cups half-and-half
  • 1/4 cup parsley, chopped
  • 1/2 cup Parmesan cheese
  • zest of 1 lemon
  • 1 tsp salt
  • 1/2 tsp pepper
  • ¾ package fettuccine

Instructions: 

  • Season chicken with salt, pepper, garlic powder, onion powder, paprika, and oregano.
  • Heat olive oil and butter in a pan over medium-low heat. Cook chicken 10 minutes on one side, then flip and cook 5 minutes more until cooked through. Remove from pan.
  • Boil pasta 2 minutes less than package instructions; set aside.
  • In the same pan, add butter and olive oil. Sauté garlic and onion until fragrant.
  • Add half-and-half, and let reduce for 5-10 minutes over medium heat.
  • Stir in parsley, Parmesan, lemon zest, salt, and pepper. Add cooked pasta and a ladle of pasta water. Toss until combined.
  • Slice chicken and serve on top of pasta. Garnish with extra sauce and parsley.
