Into the bowl of a food processor, combine 2 cups of cottage cheese, 3 tbsp any sweetener of your choice, 2 tsp of vanilla extract and about ¼ cup PLUS 1 tbsp of unsweetened cocoa powder. Run your food processor until very smooth.
Add your chocolate cottage cheese to a large bowl. To the bowl add 2 cups of almond flour, 1 cup of chocolate protein powder, about ½ a cup of chocolate chips and about 5-6 crushed up Oreo Thins. Give it a good mix and season with about 1 tsp of kosher salt.
