Chopped Egg Salad

Prep Time 14 minutes
Servings 2

Ingredients:  

  • 6 soft boiled eggs
  • 5 pieces thick cut bacon
  • 1 cup chopped green onions
  • 1/4 head of ice berg lettuce
  • 1 cup cherry tomatoes
  • 1/2 cup cottage cheese
  • 1/4 cup light mayo
  • 1 tbsp dijon
  • 1 tsp black pepper
  • 1 tsp salt

Instructions: 

  • Boil eggs for 8 minutes and cool completely.
  • Pile all of the ingredients onto a butcher block and chop.
  • Transfer to a bowl and season with additional salt and pepper if needed.
  • Serve on sourdough or lettuce cups.
