Cold Sesame Noodles

Servings 6 people

Ingredients:  

  • 1 8oz Brown rice spaghetti Or any thin pasta
  • 1 cup cherry tomatos, halved
  • 2 Medium carrots, shredded
  • 1 cup green onions, sliced
  • 2 cups snow peas, sliced
  • 1 tbsp toasted sesame seeds

Sesame Dressing

  • 1/3 cup reduced sodium soy sauce
  • 2 tbsp tahini
  • 2 tbsp smooth almond butter peanut butter works too!
  • 1 1/2 tbsp rice wine vinegar
  • 1 lime, juiced
  • 1 tbs toasted sesame oil

Instructions: 

  • Follow the package instructions and cook brown rice spaghetti. Once cooked, drain and run noodles under cold water. Toss with 1 tbs of sesame oil to avoid sticking and pour into large bowl.
  • Toss in the cherry tomatoes, shredded carrots, snow peas, green onions, and sesame seeds.
  • In a bowl mix together the soy sauce, tahini, almond butter, rice wine vin, lime juice, and sesame oil. Stir until smooth and then pour over noodles.
  • Generously toss noodles to ensure they are totally coated. Store in the fridge until serving! Serve cold and enjoy!
