Preheat your oven to 350F.
Into a large mixing bowl, combine 1 cup of flour, 1 cup chocolate protein powder, ½ cup cocoa powder, ½ tsp baking powder and a good pinch of kosher salt. Give it a good whisk.
Into the same bowl, add 1 cup milk (you can use any milk you’d like), 3 large eggs, 1/3 cup sweetener, ½ cup pumpkin puree, 1/4 cup + 2 tbsp of olive oil and 2 tsp vanilla extract. Mix well and place in an oiled 9x9 pan and bake for 36-38 min or until the centre looks set. Remove from the oven and allow to fully cool.
While your brownies are baking, combine 1/2 cup melted chocolate, 1/2 cup chocolate protein powder, 1/2 cup greek yogurt, 1/4 cup icing sugar and 1 tbsp of milk. Mix well until smooth.
Once your brownies are cooled, lather on the protein icing and top with lots of sprinkles!
