Cottage Cheese Pumpkin Muffins

Servings 24 muffins

Ingredients:  

  • 1 1/2 cups full fat cottage cheese, blended in blender
  • 1/2 cup maple syrup
  • 2 tsp vanilla
  • 2/3 cup pumpkin puree
  • 4 eggs
  • 3 cups AP flour
  • 3 tsp baking powder
  • 3 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 cup mini chocolate chips

Instructions: 

  • Preheat oven to 360F.
  • In a large bowl mix together blended cottage cheese, maple syrup, vanilla, pumpkin puree, and eggs.
  • In same bowl add in flour, baking powder, cinnamon, nutmeg, salt, and chocolate chips. Mix to combine but do not over mix.
  • Using a ice cream scooper, scoop the battle into muffin tins. This should make 24 small-ish muffins. If you want bigger ones use two scoops per muffin.
  • Place muffins in oven for 26-30 minutes.
  • Allow to cool in pan before attempting to remove the muffins.
