Freezer Breakfast Sandwiches

Ingredients:  

  • 9 eggs
  • 6 breakfast sausage patties or 12 pieces back bacon
  • 1 cup shredded cheese or 6 cheese slices
  • 6 whole wheat english muffins
  • 1/4 cup hot sauce
  • 6 squares parchment paper

Instructions: 

  • Cook the Sausage or Bacon: In a large pan over medium heat, cook the sausage patties or peameal bacon until fully cooked. Place them on a tray to cool slightly.
  • Scramble the Eggs: In the same pan, scramble the 9 eggs and season with salt and pepper. Slightly undercook the eggs to ensure they don’t overcook when reheated later.
  • Toast the English Muffins: Lightly toast the inside of each whole wheat English muffin to prevent sogginess.
  • Assemble the Sandwiches: Spread 1 teaspoon of hot sauce on the bottom half of each English muffin. Add a sausage patty or slice of peameal bacon, two spoonfuls of scrambled eggs, and a sprinkle of cheese.
  • Wrap and Freeze: Wrap each sandwich in parchment paper and place them on a baking sheet. Freeze for 1 hour, then transfer to a freezer-safe container or resealable bag.
  • Reheat and Enjoy: When ready to eat, microwave the sandwich (still wrapped in parchment) for 2 minutes or bake at 350°F for 15-20 minutes until heated through. Enjoy your homemade breakfast sandwich!
