Into a bowl, combine peanut butter, protein powder, greek yogurt, chopped peanuts, rice krispies and vanilla extract. Mix well.
With a spoon or ice cream scoop, portion into bite sized balls. Place on a baking sheet lined with parchment paper. Freeze for a minimum of 2 hours.
Melt 2 cups of chocolate over a double boiler. Dip each bite into the chocolate, place back onto the sheet tray, sprinkle with more chopped peanuts and freeze.
When you're ready to enjoy, make sure to pull and let thaw for 5 minutes.
