Frozen Protein Peanut Butter Bites

Ingredients:  

  • 1/2 cup Light Peanut Butter melted
  • 1/2 cup Vanilla Protein Powder
  • 1 cup Greek Yogurt
  • 1/4 cup Roasted Peanuts chopped
  • 1/4 cup Rice Krispies
  • 1 tsp Vanilla Extract
  • 2 cups Milk Chocolate

Instructions: 

  • Into a bowl, combine peanut butter, protein powder, greek yogurt, chopped peanuts, rice krispies and vanilla extract. Mix well.
  • With a spoon or ice cream scoop, portion into bite sized balls. Place on a baking sheet lined with parchment paper. Freeze for a minimum of 2 hours.
  • Melt 2 cups of chocolate over a double boiler. Dip each bite into the chocolate, place back onto the sheet tray, sprinkle with more chopped peanuts and freeze.
  • When you're ready to enjoy, make sure to pull and let thaw for 5 minutes.
