Halloumi Salad

Servings 6

Ingredients:  

For the Salad

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, sliced
  • 1/2 cup red onions, thinly sliced
  • 1 cup diced cucumbers
  • 1 cup fresh mint
  • 1 can can chickpeas, drained and rinsed
  • 1 can lentils, drained and rinsed
  • 1 sweet potato, diced and microwaved until soft
  • 1 cup halloumi, diced and seared in a pan

For the Dressing

  • 1/3 cup tahini
  • 2/3 cup water
  • 1 tbsp turmeric powder
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp toasted sesame oil
  • 1/3 cup fresh cilantro
  • 1 tsp salt
  • 1/2 cup olive oil

Instructions: 

  • Add all salad ingredients to a large bowl.
  • Blitz all dressing ingredients in a blender until smooth and creamy.
  • Pour the dressing over the salad, toss to combine, and serve. Enjoy!
