Ingredients:

For the Salad
1
head romaine lettuce, chopped

cup
cherry tomatoes, sliced

cup
red onions, thinly sliced

cup
diced cucumbers
1
cup
fresh mint
1
can
can chickpeas, drained and rinsed
1
can lentils, drained and rinsed
1
sweet potato, diced and microwaved until soft
1
cup
halloumi, diced and seared in a pan
For the Dressing
1/3
cup
tahini
2/3
cup
water
1
tbsp
turmeric powder
1/4
cup
apple cider vinegar
2
cloves garlic, minced
1
tsp
toasted sesame oil
1/3
cup
fresh cilantro
1
tsp
salt
1/2
cup
olive oil
Instructions:
Add all salad ingredients to a large bowl.
Blitz all dressing ingredients in a blender until smooth and creamy.
Pour the dressing over the salad, toss to combine, and serve. Enjoy!
