Healthy Buffalo Chicken Dip Recipe

Ingredients:  

  • 5 chicken breasts
  • 1 litre chicken stock
  • 1 cup green onions, sliced
  • 3/4 cup greek yogurt
  • 1/2 cup Buffalo wing sauce I use Franks
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 1/2 cup monterey jack cheese, shredded.

Instructions: 

  • Preheat oven to 400F
  • Place a large deep pan or pot over medium high heat. Add in 1 tsp olive oil followed by 5 chicken breasts. Pour over the 1 litre of stock and bring to a simmer. Cover and let simmer for 10-14 minutes or until the chicken is cooked.
  • Once chicken is cooked, chop or shred using two forks. Remove from cooking liquid and place into an oven safe dish.
  • Add in the greek yogurt, hot sauce, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Top with shredded cheese.
  • Bake in the oven for 10 minutes and then broil for 2 minutes or until top is bubbly and slightly browned.
  • Enjoy warm as a dip or store in the fridge for meal prep!
