High Protein Curry Chicken Salad Recipe

Ingredients:  

  • 4 cups chopped or shredded chicken
  • 1/4 cup diced red onion
  • 1 green apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup sliced green onions
  • 1/4 cup toasted slivered almonds
  • 1 tsp cinnamon
  • 1 tbsp Jamaican style curry powder
  • 1 tsp salt
  • 1 cup cottage cheese, blended
  • Juice of one lemon
  • 1 tsp honey

Instructions: 

  • Add all ingredients to a large mixing bowl.
  • Stir until everything is well combined.
  • Serve immediately or store in an airtight container in the fridge for up to five days.
