Preheat oven to 425F.
Peel and cube sweet potatoes. Toss with olive oil, salt, paprika, and garlic powder.
Spread out on a baking sheet and roast for 25 minutes or until golden and tender.
In a large pan, heat olive oil over medium-high heat.
Add red pepper and onion, cook for 3-4 minutes. Add black beans and stir.
Add ground beef and break it up as it browns.
Once cooked through, add seasonings, tomatoes, and stock. Let simmer for 5 minutes.
Stir in mozzarella until melted and creamy.
