Honey Whipped Feta Dip with Blistered Tomatoes

Ingredients:  

For the Blistered Tomatoes

  • 2 1/2 cups cherry tomatoes
  • 5 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp salt
  • 1 tsp pepper
  • pinch of cumin
  • 2 sprigs fresh thyme

For the Whipped Feta

  • 8 oz light cream cheese. Full fat cream cheese works too
  • 200 grams light feta
  • 1/4 cup water
  • 2 1/2 tbsp honey
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1/2 lemon, zested

Instructions: 

  • Preheat your oven to 450°F (230°C). In an oven-safe dish, combine the cherry tomatoes, garlic, olive oil, honey, salt, pepper, cumin, and fresh thyme.
  • Roast in the oven for 20 minutes, or until the tomatoes are blistered and slightly caramelized.
  • In a food processor, blender, or using a hand mixer, combine the cream cheese, feta, water, honey, pepper, salt, and lemon zest. Blend until smooth and creamy.
  • Spread the whipped feta onto a serving plate or bowl. Spoon the blistered tomatoes over the top, including any juices from the dish. Serve with crostini, crackers, or sliced baguette.
