Kale Quinoa Salad with Chickpeas

Servings 2 people

Ingredients:  

  • 3/4 cup Curry Yogurt Dressing link to dressing above

Salad

  • 1 large carrot, shredded
  • 1 cup kale, roughly chopped
  • 1/4 cup cashews
  • 1/2 apple, sliced (I like honey crisp or granny smith )
  • 1/2 cup red grapes, sliced
  • 1/2 cup red pepper, diced
  • 2 cups mixed greens
  • 1/2 cup cooked quinoa
  • 1/2 cup canned chickpeas
  • 1/4 cup chopped cilantro

Instructions: 

  • In a large bowl mix together all ingredients and toss together with the dressing. Enjoy immediately or the next day for a fuelling lunch!
