Lemon Brownies

Servings 9 Brownies

Ingredients:  

  • 2/3 cup Melted butter ⅔ cup melted butter1 1/4 sugar2 lemons zested1 egg3 yolks1 ½ tbs lemon juice1 ¾ cup flour1 tsp baking powder½ tsp saltGlaze1 cup powder sugarZest of a lemonJuice of a lemonBake 35-37 mins 350F
  • 1 1/4 cup sugar
  • 2 lemons, zested
  • 1 egg
  • 3 egg yolks
  • 1 1/2 tbs lemon juice (about 1 lemon)
  • 1 3/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Glaze

  • 1 cup powdered sugar
  • 1 tbs lemon juice (slightly more if needed)
  • 1 lemon, zested

Instructions: 

  • Preheat oven to 350f and line a 9X9 inch brownie pan with parchment paper.
  • In a bowl add melted butter, sugar, lemon zest, lemon juice, egg, and yolks. Mix to incorporate.
  • Add in flour, baking powder, salt. Mix until flour is fully incorporated. Batter will be thick.
  • Pour batter into prepared brownie pan and using back of spatula spread out batter.
  • Bake in oven for 35-37 minutes. Once cooked, remove from oven and allow to fully cool
  • In a small bowl add powdered sugar, lemon zest, and lemon juice. Drizzle glaze over cooled brownies. Cut and serve!
