Place a large pan over medium high heat. Add in olive oil and then the cubed chicken. Brown chicken for 3 minutes.
Next add in the diced sun dried tomatoes, garlic, oregano, paprika, salt and better. Cook for 4-5 mins, then add the stock and orzo, bring to a simmer, cover and reduce heat to low for 12 mins.
Once orzo is cooked add cream, spinach, basil, parmesan. Serve and enjoy!
