Sausage Kale and White Bean Soup

Servings 6

Ingredients:  

  • 1 tbsp olive oil
  • 1 yellow onion, thinly sliced
  • 4 large cloves garlic, thinly sliced
  • 1 lb ground Italian sausage (mild or hot)
  • 1 tsp smoked paprika (optional)
  • 1 tbsp flour (optional, for thickening)
  • 1 litre chicken broth
  • 2 cups water
  • 1 15-ounce can of cannellini beans
  • 3 medium potatoes, diced (any kind)
  • 4 stalks kale, ribs removed, chopped
  • 3/4 cup heavy cream (or sub half and half)
  • 1 tsp chili flakes
  • 1/2 tsp salt (adjust to taste)
  • Freshly ground black pepper and lemon juice

Instructions: 

  • Heat olive oil over medium-high heat. Add onion and garlic; sauté for 10 minutes until soft and fragrant. Add sausage and cook until browned. Drain excess grease.
  • Stir in smoked paprika and flour; cook for 1 minute.
  • Gradually add broth and water. Stir in potatoes and bring to a simmer. Cook for 10–15 minutes or until potatoes are tender.
  • Add kale and beans; simmer for 5–10 minutes.
  • Stir in cream, salt, pepper, and lemon juice. Adjust seasoning and serve warm.
