Prepare a baking sheet with parchment paper. Slice the watermelon and lay onto parchment lined baking sheet. Place baking sheet into the freezer and freeze the watermelon overnight.
Remove the baking sheet from the freezer. Scoop the greek yogurt into a bowl, grab a microplane and grate the watermelon over the greek yogurt. Drizzle on the honey, toss in the fresh watermelon chunks, and the fresh basil. Enjoy!
