Thai Chicken Meatballs

Ingredients:  

For the Meatballs

  • 2 lbs ground chicken
  • 1 red bell pepper, diced
  • 1/2 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 4 tbsp soy sauce
  • 2 eggs
  • 2/3 cup breadcrumbs
  • 1 tsp salt
  • 1 tsp pepper

For the Sauce

  • 1 tsp sesame oil
  • 1 tbsp butter
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp peanut butter
  • 1 can coconut milk
  • 2 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tbsp soy sauce
  • 1/2 tsp sriracha
  • 1 tsp salt

To Serve

  • Fresh cilantro
  • 1 lime, juiced

Instructions: 

  • In a large bowl, mix all the meatball ingredients and form into balls.
  • Heat a large pan over medium heat, melt butter, and sear the meatballs for 3-4 minutes per side. Remove from pan.
  • In the same pan, add sesame oil, onion and bell pepper, sauté for 4-5 minutes. Add garlic, ginger, peanut butter, coconut milk, sriracha, soy sauce, curry powder, and turmeric powder. Bring to a simmer.
  • Return meatballs to the pan and let simmer for 10 minutes.
  • Serve over rice with fresh cilantro and lime juice.
