Marry Me Chicken Orzo

Ingredients:  

  • 3 chicken breasts, cubed
  • 2 tbs olive oil
  • 5 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, drained and chopped
  • 2 tsp oregano
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup orzo pasta
  • 2 3/4 cups chicken stock
  • 1/4 cup cream
  • 2 handfuls spinach
  • 1/2 cup basil
  • 3/4 cup grated parmesan

Instructions: 

  • Place a large pan over medium high heat. Add in olive oil and then the cubed chicken. Brown chicken for 3 minutes.
  • Next add in the diced sun dried tomatoes, garlic, oregano, paprika, salt and better. Cook for 4-5 mins, then add the stock and orzo, bring to a simmer, cover and reduce heat to low for 12 mins.
  • Once orzo is cooked add cream, spinach, basil, parmesan. Serve and enjoy!

Made this last night as my first “Andy” recipe I’ve tried to make – SO yummy and full of flavors – and easy to put together 🙂 – I didn’t have Chicken Stock so used Broth (low sodium) but still found it a little bit salty so next time I might omit the 1 tsp salt and I think it would be super 🙂

Made 1/2 recipe tonight… I used 4 boneless/skinless chicken thighs. I did add some chili flakes to the oil in the pan (from the sundried tomatoes) and used crème fraîche because I had it. My husband and I both enjoyed it, and I will make it again! Thanks for posting this.
