There are certain appetizers that just feel like the holidays, and for me, bacon wrapped dates are right at the top of the list. Sweet dates stuffed with salty feta cheese and pickled jalapeño, wrapped in smoky thick-cut bacon, then baked until caramelized and crisp? Oh baby. These things disappear FAST.

Bacon Wrapped Dates with Jalapeño & Feta

Ingredients:  

  • 24 Medjool dates
  • 24 slices pickled jalapeño
  • 24 small cubes feta (about 2½ cups)
  • 12 thick-cut bacon slices, halved
  • 2-3 tbsp brown sugar
  • Fresh ground pepper

Instructions: 

  • Preheat oven to 400°F.
  • Line a baking sheet with parchment paper.
  • Slice dates, remove the pit, and stuff with feta and jalapeño. Wrap the bacon around each date, making sure there is overlap of about ¾ inch at least as the bacon will shrink. Top with brown sugar and pepper.
  • Bake 20 minutes or until bacon is crisp. Let cool slightly and serve with toothpicks.
  • Can be assembled a day ahead and baked when needed.

Line your baking sheet with parchment paper before you start. Between the bacon fat and caramelization from the dates, things can get sticky. Parchment makes the cleanup so much easier.

3. Don’t Overstuff the Dates

You want enough feta and jalapeño to taste them without making the date impossible to close. Give the bacon enough room to wrap snugly around the outside.

4. Use Toothpicks for Easy Serving

You don’t necessarily need toothpicks while baking, but they’re fantastic for serving. These are meant to be warm little party bites, so toothpicks keep everyone’s fingers clean and make the platter easy to attack.

5. Get Creative — But Keep the Original Recipe in Mind

My original date recipe uses feta and pickled jalapeño, but there are plenty of variations you can play with another time. Cream cheese or tangy goat cheese can replace feta for a creamier centre, while a whole almond, pistachios, walnuts, or other nuts can introduce extra crunch.

A drizzle of hot honey after baking would also be a fun finish if you want to push that sweet-and-spicy combination even further.

Absolutely, and that’s one reason I love this recipe for entertaining.

Assemble the dates according to the instructions, arrange them on your prepared baking sheet, cover, and refrigerate until you’re ready to cook. I prefer baking them fresh rather than cooking and reheating because that’s when you get the best bacon texture.

Having a tray waiting in the fridge is a beautiful thing when people start arriving.

Do You Eat Bacon Wrapped Dates Hot or Cold?

I vote warm every time.

Give them a few minutes after they come out of the oven so nobody burns their mouth, then get after it. When warm, the dates are soft, the feta is deliciously salty, and the bacon still has that beautiful crisp exterior.

Cold bacon loses some of its magic, so these stuffed dates are definitely an appetizer I’d serve shortly after baking.

I made 20 of these as a test run for family in the weekend. Some don’t like dates, others not a fan of feta. Put them all together and they disappeared in a few minutes with rave reviews. Making another big batch for Xmas eve and Day. Thanks for the great Recipies Andy.
