If there’s one thing you should know about me, it’s that I’ll never say no to feta cheese. It’s the Greek in me. Growing up, feta found its way onto almost every table. We crumbled it over salads, tucked it into pastries, served it beside grilled meats, and sometimes, just ate it with a drizzle of olive oil and a hunk of crusty bread. Recipe

Baked Feta with Orange, Olives & Pistachios

Prep Time 10 minutes
Cook Time 20 minutes

Ingredients:  

  • 1 block feta cheese (200–250 g)
  • 3 tbsp orange marmalade
  • 1/4 cup pistachios, roughly chopped
  • 1/3 cup whole pitted green and black olives
  • 1/4 cup fresh orange juice
  • 1 tbsp hot honey
  • fresh parsley, finely chopped, for garnish
  • freshly cracked black pepper

For Serving

  • crostini
  • crackers
  • toasted baguette slices
  • pita chips

Instructions: 

  • Preheat the oven to 400°F (200°C).
  • Scatter the green and black olives evenly into the bottom of a small baking dish.
  • Pour the fresh orange juice around the olives, allowing it to coat the bottom of the baking dish.
  • Nestle the block of feta cheese in the center of the dish, in the middle of the olives.
  • Spoon the orange marmalade evenly over the top of the feta, allowing some to run down the sides.
  • Sprinkle the chopped pistachios over the feta and around the baking dish.
  • Finish with a few generous cracks of freshly ground black pepper.
  • Bake for 15–20 minutes, or until the feta is soft, warm, and just beginning to turn lightly golden around the edges.
  • Remove the baking dish from the oven and immediately drizzle the hot honey over the warm feta.
  • Garnish with fresh chopped parsley.
  • Serve immediately while the feta is warm and creamy with crostini, toasted baguette slices, crackers, or pita chips for scooping.
