This is my kind of beef chuck roast recipe: 15 minutes of prep, one Dutch oven, and then the oven does basically all the work. A 3 1/2–4 pound chuck roast slowly cooks in a smoky chipotle-tomato sauce until the beef is so tender you can pull it apart with two forks.

And this isn’t your standard pot roast. Chipotle peppers, tomato, lime, honey, warm spices, garlic, onion, and a little dark chocolate give this dish a bold, smoky twist that makes it incredibly versatile. Serve the shredded beef over rice or potatoes, pile it into tacos and sandwiches, or turn it into burrito bowls and nachos.

The prep is easy. The payoff is huge. Folks, this one earns its four-hour oven nap.

Beef Chuck Roast Recipe

Ingredients:  

  • 3 1/2-4 lb chuck roast
  • 2 cups beef broth
  • 2 chipotle peppers in adobo + 3 tbsp adobo sauce
  • 2 tbsp tomato paste
  • 1/2 cup tomato sauce OR puréed tomatoes
  • juice of 2 limes
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 5 cloves garlic, mashed or minced
  • 1 white onion, sliced or diced
  • 1 tbsp cumin
  • 2 tsp smoked paprika
  • 1 1/2 tsp oregano
  • 1-2 tsp chili powder (depending on heat preference)
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tbsp soy sauce
  • 1/4 cup chocolate (dark chocolate is best)

Optional Garnishes

  • chopped cilantro
  • diced onion
  • lime wedges
  • sliced jalapeño
  • cotija or feta
  • crema (or Greek yogurt + lime + salt)

Instructions: 

  • Preheat oven to 325°F.
  • Pat the chuck roast dry. Season lightly with a little salt and pepper on all sides.
  • In a medium bowl, whisk together the beef broth, chipotle peppers + adobo sauce, tomato paste, tomato sauce / puréed tomatoes, lime juice, honey, olive oil, garlic, onion, cumin, smoked paprika, oregano, chili powder, salt, cinnamon, and soy sauce.
  • Stir in the ¼ cup chocolate (it’ll melt fully in the oven).
  • Place the roast in a Dutch oven. Pour the sauce overtop and flip the roast a few times so it’s coated.
  • Cover with a lid and bake for 3 ½–4 hours, until the meat shreds easily.
  • At the 3 ½ hour mark, pull it out and try shredding with two forks. If it doesn’t shred easily, return it to the oven for 30–60 minutes more.
  • Shred the beef directly in the pot and toss it through the juices.

Optional Recommended For Crispy Bits

  • Spread shredded beef on a sheet pan
  • Spoon a little of the cooking liquid overtop
  • Broil on high for 3–5 minutes until crispy on the edges
  • Toss again with more juices
  • Serve in tacos, burrito bowls, nachos, or over rice. Finish with your garnishes.

Why Chuck Roast Is the Right Cut

If you’ve ever wondered why chuck roast shows up in so many slow-cooked recipes, there’s a reason. It comes from the shoulder, so it contains more connective tissue and collagen than leaner cuts of beef.

That sounds like a bad thing until you cook it properly.

Give chuck roast plenty of moisture, gentle heat, and time and that collagen slowly breaks down. The result is tender beef and a rich cooking liquid that has the body you might normally associate with gravy.

That’s why chuck works beautifully in a Dutch oven. You’ll also see chuck roast recipes designed for a slow cooker or Instant Pot, although this particular recipe is written for the oven.

The big rule? Don’t rush it.

If the meat fights back when you try to shred it, keep cooking. Chuck roast tells you when it’s ready.

Beef Chuck Roast Recipe: A Sauce That Does the Heavy Lifting

The sauce is what makes this version stand apart from a classic pot roast.

Beef broth creates the base, while tomato paste and tomato sauce add body. Chipotle peppers and adobo bring smoke and heat, lime adds brightness, honey balances everything out, and garlic and onion build that savoury foundation.

Then come the spices: cumin, smoked paprika, oregano, chili powder, cinnamon, and salt.

And yes, there’s dark chocolate.

It sounds a little strange, but it doesn’t make the roast taste like dessert. It simply deepens the sauce and rounds out all those smoky flavours.

You may see traditional chuck roast recipes made with red wine, but you don’t need it here. If you ever want to experiment with a more classic braised-beef profile, red wine can be part of another version—not an addition I’d make to this original recipe.

The calm before this beef chuck roast gets very good.

Beef Chuck Roast Recipe: Minimal Prep, Maximum Payoff

This is what I love about this beef chuck roast: you don’t need to spend an hour standing over the stove before dinner even starts cooking.

There’s no mandatory sear in a hot pan, no batch cooking, and no hovering over medium-high heat.

Whisk the sauce ingredients together, place the roast in the Dutch oven, pour everything over top, put the lid on, and send it into the oven.

That’s it.

After about 3 1/2 hours, test the beef with two forks. If it shreds easily, you’re there. If it still feels firm, cover it again and give it another 30–60 minutes.

Low and slow wins this race every time.

Tips & Tricks for Perfect Beef Chuck Roast Recipe Every Time

Use the Right Vessel

A heavy Dutch oven with a tight-fitting lid is ideal because it holds heat evenly and keeps all that precious moisture trapped inside.

Don’t Rush the Cook

Four hours might sound like a commitment, but most of that time is hands-off. Chuck roast needs time for the connective tissue to break down.

Keep It Covered

That lid matters. It keeps the cooking environment moist and prevents the sauce from reducing too aggressively before the beef is tender.

Season Thoughtfully

The recipe already includes salt and plenty of seasoning. You can lightly season the beef with additional pepper before cooking if desired, but remember that the sauce has loads of flavour already.

Shred It in the Sauce

Don’t transfer that beautiful beef to another bowl and leave all the good stuff behind. Shred it directly in the Dutch oven and toss it through the cooking juices.

Every strand gets coated.

Crisp It If You Want

For extra texture, spread the shredded beef onto a sheet pan, spoon a little sauce over top, and broil until the edges get crispy.

This step is optional, but if tacos are the final destination, I’m a big fan.

This chuck roast recipe might be even better the second you start turning it into other meals.

Serve it:

  • In tacos with onion, cilantro and lime
  • Over rice in burrito bowls
  • Stuffed into sandwiches
  • Piled onto nachos
  • Over creamy mashed potatoes
  • Alongside roasted vegetables
  • With classic roast-dinner sides like carrots and potatoes

The chipotle flavour gives it enough personality to stand on its own while still making it incredibly flexible.

And if you’re feeding a crowd, this is a beautiful recipe to have in your back pocket. Six servings can go a long way once you start adding rice, vegetables, tortillas, or sides.
