Ingredients:
- 1 cup cottage cheese

- 1 tsp salt
- 1/2 tsp oregano

Mine seemed thin and spread out too much on the pan. I baked for 30 minutes, but the edges got super brown and crispy. There was no way I could fold it like a wrap.

– Try using a smaller baking sheet or contain the batter in a tighter shape (like a rectangle) so it doesn’t spread too far.
– Check your cottage cheese—some are more watery than others. You can drain off a little liquid or blend it first to get a thicker consistency.
– Watch your oven temp—if it runs hot, the edges might over-bake before the center sets. Pull it out as soon as the middle is set and lightly golden.

I love this recipe but I can’t seem to get it to not fall apart. I’ve let it cool completely but still no joy. I’ll keep trying though as it’s a great base.

– If your cottage cheese was extra low-fat or watery, that could also affect the structure.
