Crispy Smashed Potato Salad

Ingredients:  

  • 30-40 baby potatoes
  • 1 1/2 teaspoons salt
  • 2 tablespoons olive oil
  • 1 cup cucumber, diced
  • 1 1/2 cups green onion, sliced
  • 1/4 cup red onion, diced
  • 1/2 cup cilantro chopped
  • 1/2 cup mint, chopped 

For the Dressing

  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 garlic clove, grated
  • 2 chipotle peppers in adobo, from a can
  • 1 tablespoon adobo sauce
  • zest and juice of lime
  • salt and pepper to taste
  • tajin for dressing

Instructions: 

  • Preheat your oven to 450°F.
  • Place the baby potatoes in a large pot of salted water. Boil for 15 minutes, or until very soft. Drain and let them cool slightly.
  • With something flat and heavy (I used a metal measuring cup), gently smash your potatoes until about ¼ inch thick. Place on a baking sheet and dress with 2 tbsp of olive oil and 1 ½  tsp of kosher salt.
  • Roast for 20-25 min, flip and roast for another 5-6 min or until golden brown. Remove from the oven and allow to fully cool.
  • Into a large bowl add cucumber, green onion, red onion, cilantro, and mint. Add the potatoes to the bowl after they've cooled, slightly.
  • In a smaller bowl mix together Greek yogurt, mayo, garlic, canned chipotle peppers, adobo sauce, lime zest, and juice. Mix well.
  • Add the dressing to the roasted potatoes and veggie-herb mixture and mix. Top with cilantro and tajin serve!
