This one is for all the dill pickle fans out there! This is a perfect potluck or backyard BBQ, and trust me people are going to LOVE this one. This dill pickle pasta salad is easy to toss together quickly, and is absolutely something you can make a day in advance. Filled with crunchy, tangy, dill pickles, smoky bacon, cheddar cheese, swirl pasta, and a delicious creamy dressing, this is going to be a recipe you go back to time and time again.

How to make dill pickle pasta salad?

Making dill pickle pasta salad is super simple and something you can do a day in advance. Start by mixing together your spiral pasta, chopped dill pickles, your cooked bacon, fresh dill, and cheddar cheese. If you wanted to add in a protein like chicken breast, go for it! From there you make the ranch dressing to be poured over. The dressing is made by mixing together light mayo, pickle juice, light sour cream or greek yogurt, lemon juice, onion powder, garlic powder, salt, and pepper. Pour the dressing over and enjoy!

How long can pasta salad stay in fridge for?

One of the great parts of making a pasta salad is that it can stay fresh in the fridge for up to 5 days. The pasta will absorb some of the dressing so if you are planning on making in advance I do suggest keeping the dressing separately so you can pour over when ready to serve!

What type of pickles to use for this pickle pasta salad

I am a die hard fan of dill pickles. You could get funky and go for a spicy dill pickle if you wanted a bit of heat and zest to this pasta salad. Really any kind of pickle you enjoy would work in this salad. I do like using large kosher style dill pickles as it requires less digging in the jar fishing for those pesky pickles! Baby dills will work just fine too!

Dill pickle pasta salad

Servings 6 people

Ingredients:  

  • 8 oz spiral pasta, cooked
  • 7 pieces bacon, cooked and chopped
  • 7 Large dill pickles, chopped
  • 1 cup cheddar cheese, shredded
  • 1/4 cup fresh dill, chopped

Dressing

  • 1/2 cup light mayo
  • 1/2 cup pickle juice
  • 1/3 cup light sour cream
  • 1 tbsp lemon juice
  • 2 tbs greek yogurt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp pepper
  • 1 tsp salt

Instructions: 

  • In a bowl mix together cooked pasta, crumble bacon, shredded cheddar cheese, fresh dill, and cubed dill pickles.
  • In a small bowl mix together light mayo, pickle juice, sour cream, greek yogurt, lemon juice, garlic powder, onion powder, salt, and pepper. Pour dressing over and toss!
