It’s a dream side dish that works perfectly for any BBQ, potluck, or even just as a fridge-friendly weekday lunch. And the best part? It tastes even better the next day. Yeah, this is one of those pasta salad recipes that actually improves while chilling. So what’s the secret to a good pasta salad? It all comes down to balance—texture, acid, and a creamy dressing that ties it all together. And this dill pickle pasta salad recipe nails that balance. Ingredients:

  • 8 oz spiral pasta, cooked
  • 7 pieces bacon, cooked and chopped
  • 7 large dill pickles, chopped
  • 1 cup cheddar cheese, shredded
  • 1/4 cup fresh dill, chopped

Dressing

  • 1/2 cup light mayo
  • 1/2 cup pickle juice
  • 1/3 cup light sour cream
  • 1 tbsp lemon juice
  • 2 tbs Greek yogurt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp pepper
  • 1 tsp salt

Instructions:

  • In a bowl, mix together cooked pasta, crumbled bacon, shredded cheddar cheese, fresh dill, and cubed dill pickles.
  • In a small bowl mix together light mayo, pickle juice, sour cream, greek yogurt, lemon juice, garlic powder, onion powder, salt, and pepper.
  • Pour dressing over and toss!

Start with Rotini or Fusilli

For this recipe, I lean into rotini pasta because those little spirals grab onto the dressing like champs. That said, fusilli is another solid option—they’re basically cousins. You’ll want to cook your pasta just until it’s al dente, which means following those package directions closely. Once cooked, make sure to drain your pasta well and rinse it with cold water right away. This stops the cooking process and keeps your salad from going mushy later on.

Build the Flavor Base For Your Dill Pickle Pasta Salad

Once your pasta’s prepped, it’s time to build the salad in a large bowl. Toss in your chopped dill pickles (I love using big kosher ones, but baby dills or spicy pickles work too), crumbled cooked bacon, shredded cheddar, and a generous handful of fresh dill. It’s basically a flavor bomb waiting to happen.

And don’t forget: if you’re into adding a bit of extra protein, go ahead and stir in some cooked chicken. That twist turns this side into a legit main course that holds up all week in the fridge.

Dill Pickle Pasta Salad Recipe: Let’s Talk Dressing

The creamy dill pickle flavor comes alive thanks to a seriously addictive dressing. We’re using light mayo, Greek yogurt, sour cream, and a bit of lemon juice to form the base. From there, we add garlic powder, onion powder, salt, pepper, and of course, some of that salty, tangy pickle juice.

This creamy dressing is smooth, rich, and zippy all at once—exactly what you want in a simple recipe like this.

Here’s a little twist for the flavor lovers: try whisking in a teaspoon of Dijon mustard to the dressing for a subtle bite. It doesn’t overpower, but it adds another layer of depth that makes people go, “Whoa, what’s in this?”

Pickles: Choose Your Fighter

Let’s be real, the dill pickles are the heart and soul of this dish. Go big and bold with crunchy dill pickles, or keep it cute with mini dills—it’s up to you. Just avoid sweet pickles, unless you’re chasing chaos (no judgment). This salad is about that signature dill pickle punch, and it shines best with that briny, garlic-forward profile.

Quick tip: slicing pickles straight from the pickle jars is one of life’s underrated joys. And don’t toss that dill pickle juice—it’s the not-so-secret weapon of the dressing.

Meal Prep and Make-Ahead Friendly

This is one of those pasta salads that gets better with a little rest in the fridge. The flavors meld, the dressing soaks into the noodles, and it becomes this glorious, cohesive bowl of comfort. Just keep in mind that pasta can absorb a lot of the dressing, so if you’re prepping ahead, consider storing the pasta and dressing separately and tossing just before serving.

And yes, this salad keeps beautifully for up to five days. It’s great for meal prep, quick lunches, or sneaking forkfuls straight from the bowl while standing at the counter. (We’ve all done it.)

Variations & Swaps

Want to mix it up? Sub out the sharp cheddar cheese for colby jack cheese or pepper jack if you like a little kick. Don’t want pork? Use turkey bacon instead. Looking to boost fiber or lower sodium? Swap in whole wheat pasta and go light on the salt. Watching your calories? Use reduced-fat cheese or dial back on the bacon.

You could even riff on the whole thing and turn it into a macaroni salad by swapping the rotini for elbow macaroni. The vibe changes slightly, but the dill flavor still holds strong.

Want to toss in a few fresh veggies like red onions, diced celery, or chopped bell pepper? Go for it. You’ll get an extra hit of crunch and color, and it won’t throw off the balance.

Final Thoughts On This Dill Pickle Pasta Salad

There’s something nostalgic about a great pasta salad. Maybe it’s because we all grew up with some version of it at family picnics or community potlucks. But this dill pickle pasta twist brings it into the modern kitchen with big flavor, bold ingredients, and just the right amount of punch.

It’s bold. Tangy. Creamy. And craveable. And it might just be the new MVP of your best pasta salad recipes.

So next time you’ve got a BBQ coming up, or just need something chill to prep for the week, grab a few pantry staples, raid the fridge, and let those dill pickles shine. This dill pickle pasta salad recipe is a guaranteed crowd-pleaser—and hey, it might just convert a few pickle skeptics along the way.
