Ingredients:  

Chicken

  • 8-10 Boneless skinless chicken thighs
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 3 tbs greek yogurt
  • 3 tbs olive oil
  • 2 tsp dried oregano
  • 1 tsp salt

Greek Salad

  • 2 tomatos, diced
  • 1 cucumber, diced
  • 1/2 cup kalmata olives, pitted
  • 1 small red onion, diced
  • 1/2 cup Light feta, crumbled
  • 1 tsp dried oregano
  • 2 tbs olive oil
  • 2 tbs red wine vinegar

Yogurt

  • 1 1/2 cup greek yogurt
  • 1 clove garlic, minced
  • 1/2 cup fresh herbs, chopped I used mint and basil

Instructions: 

  • In a baking dish or try marinate the chicken thighs with garlic, lemon zest, lemon juice, yogurt, olive oil, greek yogurt, oregano, and salt. Mix with your hands and allow to marinate for 30 minutes or even overnight.
  • While chicken is marinating lets make the salad. In a bowl mix together tomatoes, cucumbers, onions, olives, feta, oregano, olive oil, and red wine vinegar. Toss and set in the fridge until ready to serve.
  • In a small bowl mix together the yogurt, garlic, and chopped herbs.
  • Cook the chicken on a bbq, or indoor grill for about 8-12 minutes. Once fully cooked it's time to dig in. Smear yogurt on bottom of plate or bowl, followed by the salad, and top with chicken. Enjoy!

I am not able to grill , so I am wondering if this can be baked in the oven or cooked in a crock pot?
I gave it 5 stars because it sounds so delicious!!

Hi Sue, you can definitely make this without a grill! Oven: Bake at 425°F (220°C) for 20–25 minutes, or until the thighs hit 165°F.
Crock pot: Cook on LOW for 4–5 hours or HIGH for 2–3 hours, then broil for a couple minutes if you want a bit of colour.
It’ll still be delicious!

I can’t barbecue and DONT have an indoor grill. What temperature in oven or could I do air fryer?

Hi Kathy, you can definitely bake or air fry them instead.
Oven: Bake at 425°F (220°C) for about 20–25 minutes, flipping halfway through until golden and cooked through (internal temp 165°F/74°C).
Air fryer: Cook at 400°F (200°C) for 14–16 minutes, flipping halfway.
Both ways work great — you’ll still get juicy, flavorful chicken!

Delicious!! I loved this reipe. The marinade made the chicken tende; I marinated for about 2 hours. I think I will let the yogurt sauce earlier and let it sit for a bit next time, I didn’t find it all that tasty
