How to Make Greek Chicken Bowls
1. Marinate the Chicken
First things first, let’s get that chicken marinating. In a large bowl, combine the minced garlic, lemon zest and juice, Greek yogurt, olive oil, dried oregano, salt, and pepper. Mix well. Add the chicken breasts or thighs, ensuring each piece is well-coated with the marinade. Cover and let it marinate in the fridge for at least 30 minutes, but if you have the time, let it soak up those flavors for a few hours.
2. Prep the Greek Yogurt Sauce
While the chicken is marinating, let’s move on to our creamy yogurt sauce. In a medium bowl, combine the Greek yogurt, minced garlic, and chopped fresh herbs. Give it a good stir until everything is well-blended. Taste and season with salt and pepper as needed. This sauce is the perfect tangy complement to our Greek chicken bowls.
3. Make the Fresh Greek Salad
Next up, our vibrant Greek salad. In a large bowl, combine the diced tomatoes, cucumber, Kalamata olives, and red onion. Add the crumbled feta cheese and dried oregano. Drizzle with olive oil and red wine vinegar. Toss everything together until well-mixed. This salad is fresh, crunchy, and bursting with Mediterranean flavors – it’s going to be hard not to eat it all right now!
4. Cook the Marinated Chicken
Now, back to the star of the show – the chicken. Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes per side, or until fully cooked through and you’ve got those beautiful grill marks. If you don’t have a grill, a stovetop grill pan or even baking in the oven at 400°F for about 20-25 minutes will do the trick.
5. Assemble Your Greek Style Chicken Salad Bowls
Time to bring it all together! Start with a base of the yogurt, next in goes the greek salad.Add slices of the juicy grilled chicken on top. You can also add some warm pita bread on the side if you’re feeling extra indulgent.
