Key ingredients for this Mexican Summer Corn Salad
The best summer corn– When summertime rolls around, the farmers markets are going to be bursting with some of the best produce. Depending on where you are, late summer corn is going to be the best option. Bursting with sweet corn flavour, perfect combo with a heavy char.
Cilantro to keep it fresh– This salad has many dominant flavours. We think its super important to make sure it stays bright and herby. Don’t be afraid of leaving some of the stem on the cilantro, it also has great flavour and an incredible crunch!
Acidity is king- The lime juice and zest is super important. The high acidity is what is going to balance all of that spice, heat and fresh veg flavours!
Tips on nailing this Mexican Summer Corn Salad
If you’re making this Mexican Summer Corn Salad, here’s a few tips to make sure it’s perfect every time!
Get the grill hot – Before you start grilling, make sure you have good heat built. When you lay your corn down, you want to hear it sizzle. This is going to ensure you get maximum char and flavour.
Let your corn cool- If you let your corn cool just slightly, it’ll be much easier to shave allowing you to get more off each cob!
Cut your veg evenly– With a salad like this, it’s important to keep thing consistent. Ensuring you get a taste of everything in each bite.
Make sure the dressing in on point!
The dressing is where so much of the flavour and texture comes from. We use equal parts greek yogurt and mayonnaise in this dressing, so it has plenty of tang but also creaminess. We used a generic red hot sauce with a little bit of heat but lots of great smoky flavour. But if you have a favourite hot sauce that knocks you off your feet every time, by all means kick it up a notch!
