Process for Making No Knead Market Style Bread

Here’s a step-by-step guide to making your own no knead bread at home:

  1. Mix the Dough: In a large bowl, combine the flour, yeast, salt, and hot water. You can use your hands or a wooden spoon to mix. The dough will be sticky—don’t worry, that’s exactly what you want! Ensure that you fully incorporate everything.
  2. Let It Rise: Cover the bowl with plastic wrap and let the dough rest on the counter for 3-8 hours. During this time, the yeast will ferment, and the dough will double in size. You’ll notice bubbles forming on top—this is a good sign that the yeast is working its magic.
  3. Preheat the Dutch Oven: While the dough is resting, place a dutch oven in your oven and preheat it to 450°F. You want the dutch oven to get extremely hot, which will help the bread develop that beautiful, crusty exterior. Let the dutch oven preheat for about 30 minutes.
  4. Shape the Dough: Once the dough has rested, lightly flour your work surface and your hands. Remove the dough from the bowl and gently fold it over itself about 4 times to shape it into a dough ball. Place a piece of parchment paper into a bowl and drop the dough ball in, letting it rest while the dutch oven heats.
  5. Bake the Bread: Carefully place the parchment paper and dough into the preheated dutch oven and cover it with the lid. Bake for 30 minutes with the lid on to allow steam to develop inside the pot.
  6. Finish Baking: After 30 minutes, remove the lid and bake the bread uncovered for another 15 minutes. This will give the loaf a beautiful, crusty, golden brown finish. Once done, remove from oven and let it cool completely before slicing.

What If I Don’t Have a Dutch Oven?

If you don’t have a dutch oven, don’t worry—you can still make this Market Style Bread! Here’s an alternative method:

  1. Put bread in a cast iron pan or any ceramic heat-proof dish.
  2. To mimic the steam environment of a dutch oven, place a pan of water in the bottom of your oven. This helps the bread develop that chewy crust.

Ingredients:  

  • 3 cups All Purpose Flour
  • 1/2 tsp dry active yeast
  • 1 tsp salt
  • 1 1/2 cups Hot Tap water (around 110F)

Instructions: 

  • In a large bowl whisk together flour, salt, yeast. Pour in hot water and throughly mix using your hands or a wooden spoon. Dough should sticky. Cover bowl with plastic wrap and let the dough rest for 3-8 hours. You want the mixture to double in size and start to have small bubbles on the top. You can let this sit on the counter for up to 18 hours.
  • Once you are ready to start baking, place a dutch oven in an oven preheated to 450F. Let the dutch oven pre heat for 30-40 minutes. While the oven is heating, flour a flat surface and your hands and then remove the dough from the bowl. Fold the dough over itself 4 times and then form into a ball. Place a piece of parchment paper into your bowl and then gently drop in the dough ball. Cover with a kitchen towel and allow to rest for 20 minutes.
  • Once your dutch oven is screaming hot, CAREFULLY remove from the oven, remove the lid and drop the parchment paper and dough ball into the dutch oven. Using a sharpe knife, slice the top of the dough to allow steam to release. Place cover back onto dutch oven and bake for 30 minutes.
  • After 30 minutes of baking, remove top of the dutch oven and allow bread to bake for an additional 15 minutes or until the loaf is a beautiful golden brown.
  • Remove from oven, allow to cool for 10 minutes, then slice and enjoy!!! Well done!!

This bread is so wonderful. I make it all the time. The only thing I do differently is I add 1 Tea sugar. a fiend of mine was a baker and always told me no mater what a bread recipe says… always add 1 tea to 1 tab of sugar.
