There’s nothing I love more than a dinner that looks impressive, tastes incredible, and comes together in minutes. And this one pan baked dumplings recipe is exactly that. Think frozen dumplings (yes, the store-bought kind!), nestled into a coconut curry bath, baked until tender, and finished with chili crisp, sesame seeds, and a scattering of green onions. It’s cozy, it’s flavorful, it’s TikTok-viral in spirit—and it’s the type of weeknight dinner you’ll actually make again and again. And because I live in Canada, let’s address the elephant in the room: we don’t have Trader Joe’s dumplings here. But that didn’t stop me from trying to recreate the buzz around their famous red curry bake.

I had to get a little scrappy with the pantry, swap in a few things, and test until I hit the right balance of creamy, spicy, and savory. Spoiler: I think this dumpling recipe tastes even better.

Prep Time 15 minutes
Cook Time 30 minutes

Ingredients:

  • 1 bag frozen dumplings (22–24 pieces, pork, shrimp, or vegetable)
  • 3 baby bok choy heads, washed and leaves separated

Sauce

  • 1 can coconut milk
  • 4 tbsp red curry paste
  • 2 tbsp soy sauce
  • 3 tbsp hoisin
  • 1 tbsp minced garlic
  • 1 tbsp sesame oil
  • 2 tbsp mirin (sweet rice wine) or sugar as a substitute
  • 1 tsp fish sauce
  • 1 tbsp grated ginger

Toppings

  • 2 tbsp chili crisp
  • 1/3 cup green onion, thinly sliced
  • Sesame seeds (optional)

Instructions:

  • Preheat oven to 400°F
  • In a small to medium baking dish (9×9 or large pie plate), whisk together the coconut milk, red curry paste, soy sauce, hoisin, garlic, sesame oil, mirin, fish sauce, and grated ginger until smooth.
  • Place the frozen dumplings flat-side down into the sauce, crowding them to fit as many as possible. Tuck the bok choy leaves between and over the dumplings.
  • Transfer the dish to the oven and bake for 30 minutes, until the sauce has thickened and the dumplings are cooked through.
  • Remove from the oven, gently stir, and top with chili crisp, green onions, and sesame seeds if desired. Serve directly from the dish with a spoon, or ladle over rice to soak up the flavorful sauce.

Why One-Pan Recipes Are the Real Heroes

The genius of a one pan recipe is that everything cooks together, absorbing flavor from the sauce and veggies. Less cleanup, less stress, more satisfaction. Here, your dumplings go straight from the freezer into the dish—no boiling, no fuss. The baking dish of choice is small but deep (I like a 9×9), so the dumplings can snuggle in close and really soak up the curry mixture.

By using frozen dumplings, you’re not just saving time—you’re guaranteeing consistency. Whether you prefer pork, chicken, shrimp, or vegetable dumplings, the method works the same. They go straight into the curry, tucked in with bok choy for a little freshness and crunch, and then everything heads into the oven to bake until bubbly.

Tips and Tricks for Perfect One Pan Baked Dumplings

Let’s talk about a few of the key ingredients in this dumpling recipe and why they matter:

  • Coconut milk or coconut cream – Full fat is your friend here. It creates a velvety sauce that clings to the dumplings instead of separating into thin liquid. If you’ve only got coconut cream, even better—the richness will remind you of a restaurant-style curry.
  • Red curry paste – This is the backbone of flavor. Not all brands taste the same; some are spicier, some sweeter. Taste a tiny bit before adding so you know what level of spice you’re working with. Adjusting the spice level is as simple as using less paste or adding a splash more coconut milk.
  • Soy sauce and fish sauce – They bring the salty, umami punch. If you want to watch sodium, go for low sodium soy sauce. The fish sauce may seem intense, but it melts into the curry, adding depth rather than fishiness.
  • Sesame oil and ginger – These two play off each other beautifully. Toasty nuttiness plus sharp, bright fresh ginger equals the perfect balance.
  • Bok choy – Don’t skip it. Those leafy tops steam into silky softness while the crunchy stalks give the dish much-needed texture. You could swap in napa cabbage or even spinach if that’s what’s hanging out in your fridge.

The Process: Easier Than You Think

When I say this takes three minutes to assemble, I mean it. You literally whisk the sauce in the baking dish, lay down your dumplings flat side down, tuck the veggies in, and slide it into the oven. That’s it.

While it bakes, the curry sauce thickens into the perfect dipping bath. The dumplings soften but also absorb all that layered flavor—garlic, soy, ginger, and sesame. By the time you stir it gently and add your toppings, you’ve got one pan baked dumplings that turn into a bubbling, deeply satisfying dinner ready to scoop straight onto plates (or over rice if you want extra comfort).

Garnishes That Make These One Pan Baked Dumplings Shine

This is one of those dishes that’s great straight out of the oven, but the garnishes take it to the next level:

  • A drizzle of chili oil or a spoonful of chili crisp for spice and crunch.
  • Thinly sliced scallions or green onions for freshness.
  • A sprinkle of sesame seeds or even toasted peanuts for extra texture.
  • Fresh cilantro if you like herbs in your curry (totally optional, but I love it).

It’s the kind of thing that reminds me of those viral Trader Joe’s dumplings recipes you see online—except here you can make it with whatever frozen dumplings you’ve got on hand. You can also brighten it up with a squeeze of lime or a splash of rice vinegar if you want tang against the richness.

Tips for This Dumpling Recipe

  • Foil tenting: If your oven runs hot and you’re worried about the top browning too fast, loosely cover with foil for the first 15 minutes, then uncover to finish.
  • Make it kid-friendly: If cooking for kids or spice-averse eaters, cut the red curry paste in half and add a little honey to balance the heat.
  • Storage: Leftovers will keep in an airtight container in the refrigerator for up to 3 days. The dumplings soften as they sit, but the flavors only get better. Reheat gently in the microwave or on the stovetop with a splash of broth or cup water to loosen the sauce.
This is where the magic starts

One Pan Baked Dumplings: Substitutions and Variations

One of my favorite things about this dumpling recipe is how flexible it is:

  • Use chicken thighs or breasts instead of dumplings if you’re craving extra protein ands going low carb.
  • Add extra veggies like mushrooms, spinach, or shredded carrots.
  • Try different dumpling fillings—shrimp, pork, tofu, or even a bag of Trader Joe’s dumplings if you’re lucky to have some in your freezer.
  • Stir in a spoonful of peanut butter or cashew butter for a nutty twist.

The mixture is forgiving and will still taste amazing.

FAQ: Can You Put Dumplings in the Oven?

Yes, you absolutely can! Normally, dumplings are steamed, boiled, or pan-fried, but baking them in a flavorful sauce is a total game-changer. In this French oven-baked style, they cook gently in liquid, just like pasta baked in sauce. This method keeps them juicy inside while letting the curry infuse every bite. So if you’ve ever wondered whether dumplings can thrive in the oven—the answer is a big yes.

A family favourite. I have made it a couple times, served with rice, and it’s always a hit. Very easy! I have also substituted other veg for bok choy (spinach and grated carrots, for example) and it turns out great. My kids like it too, even with the spice of the chili crisp and the red curry 🙂

Love that, Emily! Thanks for sharing!

Ann says:

We made this last night with coconut cream. The sauce was quite thin even with using the cream. It was delicious & we will be making it again. I rarely repeat dishes or follow recipes but this one was followed & saved!
Thanx

I made this tonight, it was delicious and so easy. The sauce is so good, I’m going to use the sauce recipe for chicken and shrimp too. My only substitution was I used about a tbsp of ginger garlic paste instead of fresh (didn’t have any ginger on hand) and I would do that again. Thanks for the recipe!

Tracey says:

Tried this tonight – used prawn and ginger dumplings and served it with coconut rice. Really tasty – might use a smidge more curry paste next time, but as it stands this is an excellent recipe.
