Soy Garlic Chicken and Rice

Ingredients:  

  • 2 tsp sesame oil
  • 4 cloves garlic,, minced
  • 1 bunch green onions, whites and greens separated
  • 1 1/3 cups basmati rice, rinsed
  • 2 cups chicken stock
  • 2 tbs rice wine vinegar
  • 2 tbs oyster sauce
  • 3 tbs low sodium soy sauce
  • 1 tbs sriracha
  • 6 boneless, skinless chicken thighs

Instructions: 

  • In a large pot, add the rinsed basmati rice, stock, rice wine vinegar, oyster sauce, soy sauce, sriracha, sesame oil, garlic, and the whites of the green onions. Stir everything together.
  • Bring the mixture to a boil over medium-high heat.
  • Once the mixture reaches a boil, place the chicken thighs on top of the rice mixture.
  • Reduce the heat to low, cover the pot, and simmer for 20 minutes until the rice is cooked and the chicken is tender.
  • Remove the pot from heat and let it stand for 5 minutes.
  • Fluff the rice with a fork, top with sliced green onions, and drizzle with chilli oil if desired.
  • Serve the garlic soy chicken and rice hot with fried eggs, if you like. Enjoy!

Loved this! So easy and ingredients I always have on hand. I used brown rice instead of white and chicken breast filets instead of thighs. I’m not a fan of fried eggs so I threw in broccoli for the last few minutes to steam.

Soy Garlic Chicken and Rice does this recipe work just as well in the rice cooker and does it make a difference if you dont use basmati rice but japanese short grain rice?

This recipe is meant to be cooked all in one pot on the stovetop, so a rice cooker isn’t really needed. That said, you can adapt it, but the stovetop method gives you the best flavor and texture with minimal fuss! As for Japanese short grain rice, it will work, but expect a stickier, more moist texture than with basmati. Still tasty—just less fluffy. You may want to slightly reduce the liquid by a few tablespoons to avoid it becoming overly soft.
