Pineapple Coconut Mocktail

Prep Time 10 minutes
Servings 6

Ingredients:  

  • 1/2 fresh cut pineapple
  • 1/4 tsp nutmeg
  • pinch of ground cloves
  • 1 small can coconut cream
  • 1 liter coconut water
  • 1 lime, juiced

Instructions: 

  • Cut the fresh pineapple into chunks and add it to a blender.
  • Add the nutmeg, ground cloves, coconut cream, coconut water, and freshly squeezed lime juice.
  • Blend on high until the mixture is completely smooth and creamy.
  • Pour the mixture through a fine-mesh strainer into a large pitcher or bowl, pressing gently with the back of a spoon to extract as much liquid as possible.
  • Discard the remaining pulp.
  • Fill a cocktail shaker with ice, add a portion of the strained mocktail, and shake vigorously until well chilled.
  • Strain into chilled serving glasses filled with fresh ice, if desired.
  • Garnish with a wedge of fresh pineapple, a lime wheel, or a light dusting of freshly grated nutmeg, if desired, and serve immediately.
  • Store any remaining mocktail concentrate in an airtight container in the refrigerator for up to 2 days.
