We are big fans of golden beets in our house, they’re incredibly nutritious, extremely tasty, and dang beautiful! I prefer these golden beets to the red, as I find them sweeter and they become a beautiful yellow after they are roasted.
Since these golden beets are sweeter than normal, it makes it a perfect match for a nutritious salad with a ponzu vinaigrette.
