Ingredients:
- 4 9 or 10 inch white wrap or tortilla
- 454 grams ground chicken
- 3 tbsp oregano
- 1 tsp thyme
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cayenne
- 1 tsp paprika
- 1 tsp kosher salt
- 1/2 tsp cumin
Toppings
- 1/2 cup plain yogurt, sour cream, tzatziki or garlic sauce
- 1/2 cup chopped cherry tomatoes
- 1/2 cup cucumber, cubed
- 1/3 cup feta, crumbled
- 1/4 cup fresh parsley, finely chopped
- 2 cups romaine lettuce, thinly sliced
- 4 tbsp red onion, chopped
- 4 lemon wedges
- Hot sauce
- Salt
Instructions:
- Add the ground chicken to a large bowl.
- Add the seasonings: oregano, thyme, onion powder, garlic powder, cayenne, paprika, kosher salt, and cumin.
- Mix until evenly combined.
- Lay out your wraps/tortillas on a clean surface.
- Divide the chicken mixture into 4 equal portions.
- Spread one portion of the ground chicken mixture thinly onto one side of each wrap.
- Smear it all the way to the edges for even cooking and better browning.
- Season the meat side with a little extra salt.
- Heat a large frying pan over medium heat.
- Add a touch of oil and swirl to coat the pan.
- Place one wrap meat-side down into the preheated pan.
- Cook for 5 minutes, without moving it too much, until the chicken is browned and cooked through.
- Flip the wrap and cook for 30 seconds to 1 minute to toast the tortilla. Watch closely as it can burn quickly.

Sorry, I changed a couple things. 3 tablespoons of oregano in 1 lb of ground chicken seemed excessive to me I used 1 tsp. And I used 1/4 tsp of cayenne instead of 1 tsp. These were OUTSTANDING, so tasty, easy, fresh, and I loved the crispness of the tortilla. Would def make again. Thanks for a super tasty midweek meal!
