Spicy Salmon Cucumber Salad

Prep Time 20 minutes
Servings 2 people

Ingredients:  

  • 2 Cucumbers, thinly sliced
  • 1 cup green onions, sliced
  • 1/3 cup toasted sesame seeds
  • 1/2 cup toasted panko Brown in hot pan with 1 tbs olive oil.
  • 1 cup Smoked Salmon, Chopped
  • 1 tsp wasabi
  • 1 tbs ginger, grated
  • 2 tbs kew pie mayo any mayo works fine
  • 1 tbs sriracha
  • 2 tbs soy sauce
  • 2 tbs rice wine vinegar

Instructions: 

  • In a bowl add cucumbers, green onions, toasted sesame seeds, toasted panko, and smoked salmon. Next add in wasabi, ginger, mayo, sriracha, soy sauce, and rice wine vinegar. Toss and serve cold!
